Cornmeal Crackers

These are some yummy crackers that are easy peasy to make. My three-year-old can devour these in minutes.

1 cup fine corn meal

1 cup spelt flour (whole wheat flour may be substituted)

1/2 tsp. sea salt plus more for sprinkling

1/2 tsp. baking soda

1/2 tsp. baking powder

1/3 cup of melted butter (olive or coconut oil may be substituted)

1/2 cup buttermilk

Sift dry ingredients together in a medium bow. Add buttermilk and butter (or oil) and stir until a loose ball of dough is formed. Dump out dough between two pieces of parchment paper and roll out into a very thin rectangle (1/16inch). Transfer to a large baking sheet and take off the top sheet of parchment paper. Cut crackers into desired shape with a knife. I personally make diamonds, but you could make squares, rectangles or even use a cookie cutter for fun. Prick each cracker with a fork. Bake for about 12 minutes in a 350° F oven. Turn oven off and let crackers cool with the oven so they become quite crispy. Take out and enjoy! These can be stored in a tin for about a week if they last that long! Makes between three and four dozen.
